When you’re ready to bake, preheat your oven to 375° and line a baking sheet with parchment paper or a silicone baking mat. Pull your dough out of the fridge and let it sit for 5-15 minutes or just however long it will take before you can divide the dough in half Although these gingerbread men scream Christmas to me you can, of course, making them at any time of year.

Equipment– For this recipe you’ll need some mixing bowls, a baking tray, a silicone mat or parchment paper, a hand or stand electric mixer, a rolling pin and cookie cutters. Now, I used gingerbread man shaped cookie cutters but really you can cut out and decorate whatever cookie shape you’d prefer.

When mixing your dough, it may seem like it is going to be a bit dry, once you’ve added the flour. Don’t worry! Once you get your hands in to help mix, the warmth from your hands will help the butter/margarine soften more and help bring everything together.

Put them on baking trays lined with baking paper and bake in the oven for just 7 minutes to get soft chewy gingerbread biscuits.
